Hide Yamamoto @ Marina Bay Sands

This is our second visit to Hide Yamamoto at Hide Yamamoto, but the first on this blog. Hide Yamamoto is the first overseas branch for the chef outside of Japan.

Hide Yamamoto is one of the few restaurant along the celebrity restaurants floor which opens for both lunch and dinner till late.

There are different dining areas inside the restaurant. Mainly the sushi counter, teppanyaki counter and other dining sections. We chose to sit at the sushi counter.

Ingredients for assortment of sushi - Chutoro (belly part of the tuna) @ S$18 each, mejina (like a snapper), mekajiki (swordfish) @ S$8.50, and kohada (known as gizzard shad) for sushi. We forgot to take a photo of the sushi rolls after they were made!

Setsu Jyukusei (S$125 per bottle) - A kind of Japanese sake

Cha-shu Soy Ramen (S$22) - Pretty average ramen. Not really the best ramen in Singapore.

On the other hand, the Baked Gyoza (S$11.50) with Citrus Soy Sauce and Sesame Miso was very good. They were flavourful and baked till crisp. The sauces went well with the gyoza.

Preparation for sashimi

Chawan Mushi (S$14.50) with Black Truffle flan and shark fin broth was silky smooth, and reminded me of the version in Kunio over at Resorts World Sentosa.

The Sashimi we had were otoro which was fatty tuna, clams, octopus and kime snapper. Very fresh and sweet.

Shark Fins Japanese Claypot Rice (S$48) - Although the claypot rice is very common in Singapore, but the addition of Shark Fins gave this dish a more upmarket feel to it.

Japanese seasonal fish boiled in broth with Pink Shrimp (S$24) - The seasonal fish is Mebaru, which is a type of rock fish. A tad too salty but the fish was firm and of a very high quality.

Green Tea Cappuccino (S$19) - Green Tea White Chocolate Mousse, Chocolate Cream, Green Tea ice-cream and green tea bubble.

Pinky Chick (S$18) - Tapiocca pearls, Yuzu fizz, Japan-flown strawberries, floating on strawberry soya milk shake. The Yuzu fizz has a nice tingling effect, while the strawberry candy ribbon tasted delicious.
