The Steeping Room is a pop-up guerilla retail space put up by the people behind Papa Palheta. Tucked away in an old housing block in Waterloo Street, it would take a slip on a banana peel on the steepest slope for one to stumble upon this place (unless you are informed).
If you see weighing balances, bunsen burners, beakers and conical flasks, no, your eyes are not playing tricks on you. Judging by all these 'barangs' (set-ups), even the least coffee-knowledgable person could tell that they mean serious business here.
No milk-based nor sweetened coffee is served here.
Manned by a group of experienced and passionate baristas, the space is truly a dedication to the ultimate coffee appreciation. Each week they try to bring in beans from various regions of the world and experiment them on different brewing methods.
I strongly recommend The Steeping Room Series($20 for 1, $35 for 2).
Free your senses as you allow one of the resident baristas to take you through the brewing process, one step at a time. To help you understand the beans better, each of the blend is paired with dark and milk chocolate (from Royce!).
While dark chocolate enlivened the flavour of my Ethiopia Yirgacheffe, milk chocolate worked wonders with a bean of high acidity such as the Papua New Guinea Sigri Peaberry.
It was an experience like no other.
